The air-dried salmon sections are rich in unsaturated fatty acids and therefore contain a high proportion of the vital omega-3 as well as omega-6 fatty acids. These fatty acids can contribute to a significant reduction in blood pressure in addition to soft, shiny fur.

Moisture can promote mold growth regardless of the best before date. However, the white spots often found on our dried meat products are not mold, but rather crystallized protein. During drying, protein deposits on the surface of the meat and crystallizes there. Especially when stored at cool temperatures, this protein can appear as a white (partially greasy) film on the product.
